Trixon Wine Co.
Located in Monterey County, California, Trixon Wine Company is the brainchild of vintner Patrick Jackson. The winery crafts traditional Iberian Peninsula varietals in honor of Jackson’s D’Araujo lineage, whose origins trace back to the Galicia region of Northwest Spain and later traversed Hawaii and the Azores en route to America.
Trixon Wine Company espouses a pro-biodiversity ethos by cultivating all its varietals organically and limiting additive usage to the bare minimum. Notably, the Garnacha undergoes 100% whole-cluster fermentation, while the Albariño is barrel fermented.

This wine shows beautiful bouquet of Calamansi lime, green mango, and grapefruit, with an electric acidity accompanied with the perfect balance of oakiness, acidity, and minerality.
It pairs beautifully with oysters, crab, and other shellfish, as well as high-fat meats like pork belly, and can be enjoyed now, or aged through 2032+.

The wine pours to a red color with a garnet rim. Fruit profile of red cherry, watermelon, and strawberry. Whole cluster leads to a spice of crushed black pepper, clove, all spice, and anise. Beautiful tannin creates a mouthfeel that covers the whole palate, and leaves you lingering for more.
The wine pairs perfectly with wild game, pork or steak dishes. Also look to pair this wine with Manchego and Petit Basque cheeses.
This Garnacha can be enjoyed now, or aged through 2030+.

Coastview Vineyard in the Gabilan Mountains of Salinas Valley boasts elevated ridges at 2,200-2,400 feet. The vineyard’s sustainability focus maximizes terroir expression, while Pygmy Sheep graze native grasses. Shallow, low-vigor soils with decomposed granite and limestone layers overlay thin topsoil.
Cooling breezes from Monterey Bay balance warm days, fostering ripe fruit flavors and elegant acidity. Abundant sunlight and cool nights create perfect conditions for even ripening and extended hang times.

Albariño grapes thrive in Monterey County’s Gularte Family Vineyard, nestled in Mount Toro’s foothills. These vines occupy a distinct vineyard section, facing northwest with rows oriented from north to south. This setup captures the afternoon sun while shielding the clusters from morning breezes, preventing sunburn during the late-maturing stage.
The vineyard’s gradient promotes fruit maturity, resulting in a finely-crafted wine with a crisp character. Wayne Gularte’s meticulous studies and trials led him to select this exquisite part of River Road as the ideal terroir for Albariño.
PROCESS
From Soil to Bottle
The 2019 Garnacha was in a growing season that came after a wet winter. The cool weather provided a long growing season with a harvest of 2 tons on October 21, 2019. The harvest took place at 4 a.m. to ensure cold fruit was delivered to the winery.
Patrick foot-stomped each bin before transferring to tank. Fermentation took place for 32 days and then the must was pressed.
The wine was aged for 17 months in 6 neutral french oak barrels from François Frères Cooperage. The wine was bottled with 45ppm total S02 added.
The 2021 Albariño was harvested on October 20, 2021 at 6 AM ensuring cold fruit arrived to the winery. The wine was whole-cluster pressed, then held at 38 degrees for 10 days before racked into barrels (10% new) for fermentation, aged utilizing bâtonnage to enhance mouthfeel.

Patrick Jackson
Patrick, a Fresno State graduate, holds a double major in Viticulture and Enology, along with a Minor in Chemistry. During his time at Fresno State, he assumed leadership as Vice President of the Enology Society while also contributing as Senior Research Assistant and Winemaker for the Grape Rot project.
Following graduation, he served as Assistant Winemaker at Joullian Vineyards in Carmel Valley, working diligently to enhance their sustainability practices. Transitioning to Morgan Winery, renowned for its organic certification, Patrick crafted exquisite Pinot, Chardonnay, and Syrah wines sourced from prestigious vineyards in Monterrey County’s American Viticultural Area.
Building on his expertise, Patrick established Trixon Wine Co. in 2019, and completed a Master’s Degree in Business with a focus on Food Entrepreneurship at Santa Clara University in 2021.
Beyond his winemaking pursuits and studies, Patrick cherishes quality time with his wife, daughter, and their four beloved pets. He embraces his passion for the ocean, regularly engaging in surfing and outrigger canoe paddling.
