Located in Monterey County, California, Trixon Wine Company is the brainchild of vintner Patrick Jackson. The winery crafts traditional Iberian Peninsula varietals in honor of Jackson’s D’Araujo lineage, whose origins trace back to the Galicia region of Northwest Spain and later traversed Hawaii and the Azores en route to America.
Trixon Wine Company espouses a pro-biodiversity ethos by cultivating all its varietals organically and limiting additive usage to the bare minimum. Notably, the Garnacha undergoes 100% whole-cluster fermentation, while the Albariño is barrel fermented.

2019 Garnacha
The wine pours to a red color with a garnet rim. Fruit profile of red cherry, watermelon, and strawberry. Whole cluster leads to a spice of crushed black pepper, clove, all spice, and anise. Beautiful tannin creates a mouthfeel that covers the whole palate, and leaves you lingering for more.
The wine pairs perfectly with wild game, pork or steak dishes. Also look to pair this wine with Manchego and Petit Basque cheeses.
This Garnacha can be enjoyed now, or aged through 2030+.

Coastview Vineyard
The Coastview Vineyard is located in the Gabilan Mountains on the east side of the Salinas Valley, on an exposed ridge top between 2,200 and 2,400 feet of elevation. The Vineyard is a dramatic site that offers a panorama of surrounding mountains, valleys and coastline. It’s farmed with a focus on sustainability and low impact to maximize its ability to express terroir. Pygmy Sheep graze the native grasses in and around the Vineyard. Water to sustain the vines through the dry summer months is sequestered from artesian springs in lined ponds.
The Vineyard soils are shallow and low vigor with layers of decomposed granite, substantial limestone component and thin top soils. The cooling breeze blowing in off the Monterey Bay moderates the warm days with cool night temperatures. This exposed ridge top vineyard enjoys abundant, unencumbered sunlight, fostering even and consistent ripening. The warm days and cool nights allow for long hang times that result in perfect conditions for ripe fruit flavors and elegant acidity.

The 2019 Garnacha was in a growing season that came after a wet winter. The cool weather provided a long growing season with a harvest of 2 tons on October 21, 2019. The harvest took place at 4 a.m. to ensure cold fruit was delivered to the winery. Patrick foot-stomped each bin before transferring to tank.
Fermentation took place for 32 days and then the must was pressed. The wine was aged for 17 months in 6 neutral french oak barrels from François Frères Cooperage. The wine was bottled with 45ppm total S02 added.

Patrick Jackson
Patrick graduated from Fresno State with a double major in Viticulture and Enology, and a Minor in Chemistry. While at Fresno State, he was the Vice President of the Enology Society, and Senior Research Assistant and Winemaker for the Grape Rot project.
After graduation, he worked as Assistant Winemaker at Joullian Vineyards in Carmel Valley. There, he worked towards making Joullian more sustainable with their Winemaking and Vineyard Practices. After 2 years, he worked briefly as Lab Manager for a large wine company but realized that winemaking on that scale did not suit him. So he left for Morgan Winery to become their Assistant Winemaker. The only Organically certified vineyard in the Santa Lucia Highlands, Morgan Winery helped hone Patrick’s love for organics. Patrick was blessed to make Pinot, Chardonnay, and Syrah from some of the most prestigious vineyards in the American Viticultural Area of Monterrey County.
In 2018, Patrick enrolled in Santa Clara University to successfully pursue a Master’s Degree in Business with a concentration in Food Entrepreneurship. In 2019 he founded Trixon Wine Co.
When not making wine or studying, Patrick can be found spending time with his wife and daughter, along with their 3 dogs and cat. He loves the ocean and spends as much time as possible surfing and outrigger canoe paddling.
